THE BEST CAKE YOU WILL EVER EAT

This week has gone so fast don't you think? It has just wizzed by in a flash and today see's us at SATURDAY. Already. How is it so?! I must apologise for my lack of baking and recipe posts of late. I admit the motivation had left me and I was so busy with work and life that I just hadn't had the time or the inspiration. Yesterday Naomi had a friend come to play and so before school pick up I had a little poke in the cupboards and what do you know, they are almost bare. AGAIN. 


The thing with me is that I ALWAYS keep staples in the cupboards. That is, flower, sugar, vanilla, eggs, butter, milk, icing sugar. Those sort of things. Always stock those, because you just don't know when you will need to pull out all the stops and bake something to entertain your guests with!


So I whipped up this little cake and I must say that it was the best cake I had eaten in a very long time. It is not fancy. It is just a butter cake but it was light and it was fluffy and it was YUMMY. They are the three things you want to look for. Light. Fluffy and yummy. Simple.




The girls loved it and what do you know, there is still half a cake left here for the weekend for me to share with whoever may drop by. That is if I don't finish it off all by myself!


The best cake you will ever eat

125g butter, softened
1/2 cup sugar
2 eggs
1 1/2 tsp vanilla essence
1 1/2 cups self raising flour
1/3 cup milk

So here is how you do it. Beat the butter and sugar and vanilla together until fluffy. Add the eggs and beat. Add the flour and milk and continue to beat until thick.

Line and grease a baking pan and pour the ingredients in.

Bake in a 180deg oven for about 40 minutes. 

Ice with your favourite icing. I used icing sugar and some softened butter and milk whipped together to make mine and added chocolate sprinkles and chocolate bits.
