Scrolls for the masses!

I really apologise that this post has taken me so long to put up. Things have been crazy. Last weekend was my sister inlaw's 40th birthday and i {crazily} offered to make some scrolls for oh, about 100 people and it was a marathon effort. These one's were my fave and so I will share the secret recipe with you. Maybe you could give this a go this weekend? Perfect if you are entertaining and don't take too long to whip up!

Berry Scrolls

Ingredients

1 cup warm milk
4tsp dried yeast (2 7g sachets)
4 tbsp caster sugar
2 eggs, lightly whisked
4 cups plain flour
120g unsalted butter
100g fresh berries or thawed slightly frozen
1tbs caster sugar extra
300g fresh ricotta
2 egg yolks
2 tbsp milk


Method

In a clean dry bowl add the yeast, sugar and the milk and let it sit in a warm spot for about 10 minutes until it is foamy and thickened. Add the egg yolks and whisk to combine.


Meanwhile in a food processor (or in a bowl) mix together the butter and flour until it becomes like breadcrumbs. 


Add the yeast mixture and process.

Knead slightly and put in clingwrap and set aside for about 30 minutes to 1 hour until doubled in size.

Preheat oven to 180 deg and line baking tray with baking paper.

Take wrap off dough and knead with a little flour and roll out into a rectangle on some baking paper.


Spread the dough with the ricotta and sprinkle with a little extra caster sugar and the berries.


Roll up by the longest end so that you have a roll.


Cut into pieces with a serrated knife. (see my new york one!!....YES).


Place on baking tray or into dish with edges nearing eachother slightly. You can sprinkle with a little extra sugar if you like.


Bake in oven for about 30 minutes until golden.

Serve warm.

Now, this recipe can go a million ways. I also used the dough recipe and added these extra's

choc-hazelnut
spread dough with nutella and add a block of chopped hazelnut chocolate

cheesy-vegemite
spread dough with a little butter, vegemite and sprinkle with grated tasty cheese

cheese and bacon
spread dough with tomato paste. Add bacon bits and grated tasty cheese

cinnamon
spread dough with a mixture of brown sugar, cinnamon and softened butter
