There just does not seem to be enough hours in the day lately don't you think? We have had birthdays, school, work, cleaning, visiting, renovating, head spinning. etc. etc.....
This weekend was huge. It was Naomi's birthday on friday and a few little friends popped over for afternoon tea. Of course there was cake, but this year was the first year that I did not bake. Nope. I BOUGHT that cake and I made a little bunting to pop on top. I thought it was quite chic and cute and she loved it.
I have been trying to get back into some crochet, and I had a go at making a little crochet embellished top for Naomi. I think it turned out quite cute and I think I'll be adding these to Mary + Lil's range this year. What do you think?
Come saturday night we were all a bit of a wreck and I have to admit I am over cooking at the moment. I just have no motivation to think of what to do and we are in LOVE with these quesadillas at the moment. They are so quick to whip up and we always seem to have left over wraps from wrap nights that I keep in the freezer for times like these. We had some left over bbq chicken from lunch so these were easy peasy.
Quick Quesadillas
Ingredients
capsicum cut into cubes
grated tasty cheese
cut up spring onion
sweet chilli sauce
tortilla wraps
cut up cooked chicken
baby spinach
sour cream
Method
Cut up all your ingredients and set out on bench. Heat your non stick frypan onto a low to medium setting.
Add the tortilla and pile on the ingredients. Sprinkle with a little sweet chilli if you so desire. I know I do!
Add the other tortilla to the top and let it cook for a few minutes until you see the bottom turning brown and the cheese starts to melt.
Turn that baby over and cook the other side.
Once done take off and cut into triangles.
Serve warm with some sour cream. These were devoured in seconds here at our house and I am sure they will be at yours!
