Chicken Paella


This weather has meant some serious eating of comfort food and this recipe is no exception!

Its nothing but wholesome ingredients, thrown into a pan and wallah!. Paella.

you will need:

1kg chicken thigh fillets, cut up
3 cups white or brown rice
peas
onion
chicken stock
white wine
1 tin tomatos diced
curry powder
paprika


so, how you make it is:

Fry up the chicken in some olive oil and set aside.

In a pan or wok, fry up some brown onion in olive oil until its browned and soft, add some curry and a hint of paprika and stir until spices are sizzling. add about a cup of white wine and simmer for a minute or so. Add the tin of tomatoes. Add the rice and then add enough stock to cover. You will have to stir this pretty much continually while the rice is cooking. When there is about five minutes to go add the peas and the cooked chicken and stir. 

You may find that you need to keep adding stock every few minutes. I do this until it reaches a good soft consistency. Add salt and pepper and then serve.

I promise you that this will not disappoint.
