Apologies for this taking SO LONG to get to you. I whipped up this cake on friday afternoon. It was simple and quick and just the thing for those who love coconut. It doesn't scream coconut, but there is just enough of the stuff in this cake.
There really isn't much to it. It is a take off of this simple butter cake recipe that I posted a few weeks ago. It basically uses the same ingredients + coconut, so there you go!
Ingredients
125g butter
1/2 cup sugar
2eggs
1 1/2 tsp vanilla essence
1/2 cup milk
1/2 cup coconut
icing sugar
milk
coconut
So beat the softened butter, sugar and vanilla. Then add the eggs, beat. Add the dry ingredients and then the milk. Pour into a tin and bake on 180deg for about 40 minutes or until browned on top. Cool and mix some icing sugar with some milk and pour over the top. Sprinkle with some coconut and devour!
