Lunchbox classics :: chocolate chip muffins




School resumes in one day and its that time again. Time to fill those lunch boxes with tasty treats for the kiddies. This recipe comes adapted from a family circle blueberry muffin recipe so if you like, you can omit the chocolate chips and add blueberries instead for something different! 

Ingredients
3 cups Self Raising Flour
3/4 cup brown sugar
125g butter, melted
2 eggs beaten
1 cup milk
1 cup chocolate chips


Method
Preheat oven to 210 degrees. Brush a 12 hole muffin tin with melted butter. 
Sift the flour into a bowl and add the sugar. Add the chocolate chips and mix together.
In another bowl add the butter, eggs and milk and whisk together with a fork, add to the flour mixture. 
mix until all the ingredients just come together.
place large spoonfulls of mixture into muffin tins. I fill mine to the top of the tin. Bake in the oven for about 20 minutes or until golden on top. 
Take out of tins and cool on wire rack.
