Cheesy garlic pizza

So I am a huge fan of pizza and a huge fan of garlic and yesterday I was cooking up the pasta and I thought that I would try to reinvent the garlic bread. Jazz it up a little if you will.

When we were on holidays we had the best pizza from the little pizzeria in Coffs Harbour and they made the best garlic cheese pizza so I thought I would try to make my own...

This is what you do:

To make the dough take 2 1/2 cups of plain flour, a pinch of sugar and about 1 tsp salt and mix together in a bowl. In another bowl add 2tablespoons of dried yeast and 1 cup of tepid water. Mix together and leave to activate for about ten minutes.

Once activated and frothy mix into the flour mixture. Take out and knead in some flour for about five minutes. Put back into bowl and cover with some clingwrap and leave in a warm place for at least half an hour until almost double in size. Take out and knead.

This dough will make at least two large size pizzas so once kneaded divide the mixture to how many you want and roll out onto some greaseproof paper.

Next step is to make your oven really hot. Preheat to 220deg for at least 15 minutes with trays inside.

Rub some garlic olive oil onto the pizza or you could rub olive oil and mix in some garlic cloves. Grate cheese on top. You could use any but I used tasty and Parmesan. Sprinkle with salt and cracked pepper and take the trays out of the oven and slide the pizzas on to them. Pop them in the oven and cook until base is crisp. Shred some baby spinach and throw on top!!

So yummy. A great snack or a great accompaniment instead of the humble garlic bread.
