Everyone knows that Friday nights call for an easy, quick meal. Instead of reaching for the takeaway menu, why don't you try this beauty?!
The best thing about this meal is that there is really little preparation. It is cheap, quick, simple and relatively healthy.
Here goes:
Ingredients:
500g lean beef mince
1 carrot diced finely
A cup of frozen veggies
Iceberg lettuce
3 tablespoons soy sauce
2 tsp curry powder
2 tablespoons tomato sauce
1 onion (optional) diced
1 cup uncooked rice
2-3 cups water
Salt and pepper
So, in a frypan brown off the mince and onion if using and drain any oil out. Add the curry, soy, sauce, veggies, rice, salt and pepper and about 2 cups of the water. Bring to boil then turn down to simmer until rice is cooked and it's a taste sensation.
Pull your iceberg lettuce off one sheet at a time, try and keep it big enough to house your mince.
Serve the mince cupped in the rice, fold it all together and eat! Yummy!!
