Bruschetta

Today called for a tasty lunch. I went to the food lovers market and when I spotted a loaf of wood fired bread I knew bruschetta was on the menu!

So basically this is what you need

Tomatoes chopped
Basil chopped
One garlic clove
Olive oil
Crusty bread, cut
Red onion
Balsamic vinegar
Salt and pepper

And this is how you make it!:

Take your tomato, red onion and basil and chop roughly.

In a bowl add chopped ingredients and add a few splash's of olive oil, a few splash's of balsamic and some salt and pepper and mix around.

Then take the bread and cut some thick slices. In a toaster or sandwich maker, toast the bread and spread with some butter or a little olive oil. Take the garlic clove and rub onto the bread. Top with the bruschetta mix!

Now eat!!

  1. Ooooh that look delicious! You've inspired me to bake a loaf of bread to have for dinner tonight. I've weirdly got a glut of tomatoes after going nuts at the farmers' market on Saturday morning. Local tomatoes in August? I'll take two dozen thank you!
