Sweet potato, caramelised onion and baby spinach frittata

I am trying to be a tad healthier with my eating at the moment and was getting a bit sick of meat so decided after a chat with a lady from work to whip up a frittata. This was her suggestion and you will LOVE it!!!

Ingredients
2 sweet potatoes peeled and thinly sliced
4 onions
2/3 cup brown sugar
1 tablespoon malt or balsamic vinegar
1 tablespoon butter
Grated or shaved Parmesan cheese
8 eggs, whisked
Handful of baby spinach

Method
So take a small lasagne dish (I used a square one) and arrange your sweet potato on the bottom of dish.

To make the caramelised onions, slice onions thinly and over high heat cook in the butter until golden. Add the brown sugar, reduce heat and cook, stirring occasionally until thickened. This will take about 20 minutes.
Add the vinegar and stir cooking for a further 5 mins.

Place your onion over the potato and top with baby spinach.

Whisk up the eight eggs in a bowl and pour over the rest. Top with the grated Parmesan and bake in a moderate oven for about 20-30 mins until cooked!
