Pear and blueberry cake


Today I was in a baking mood. I really had to bake and I really had to make this cake. It just looked so yummy!
This cake is perfect for the easter long weekend. Serve it with King Island cream for a sweet indulgence!

Pear and Blueberry cake

ingredients


130g butter, softened
130g caster sugar
2 eggs
130g plain flour
1 tsp baking powder
250g blueberries
2 ripe pears

method

cream the butter and the sugar in a bowl until light.


Wisk the egg lightly with a folk


Add the egg mixture to your butter mixture and mix. Sift the  flour and the baking powder into the bowl and fold in


It should look like this. Do not over-fold


Put the mixture into a lined springform tin and flatten the top


cut up the pears into cubes and place with the blueberries on top of the mixure in the tin



Bake in a preheated oven at 190deg for 1 hour until golden on top.
 I needed a little longer with my oven


sprinkle with some icing sugar


cut and serve!
