Anzac Biscuits


This Anzac day why don't you have a go a whipping up some of these gorgeous Anzac biscuits. The recipe is taken from the Womens Weekly Big Book of Beautiful Biscuits and they are so yummy and chewy. Perfect to have tomorrow whilst we remember our fallen soldiers and those in battle. I have made two batches over the last week and know I will be making some more tomorrow!

Ingredients

1 cup rolled oats
1 cup plain flour
1 cup sugar
3/4 cup coconut
125 g butter
2 tablespoons golden syrup
1/2 teaspoon bicarb soda
1 tablespoon boiling water

Method

Combine the oats, sugar, flour and coconut in a bowl. In another bowl, combine the syrup  and butter and heat until melted. Mix the bicarb and boiling water and add to the melted butter mixture. Stir into the dry ingredients. Roll the mixture into balls and place on lined baking tray. Bake in a slow oven (150deg) for about 20 minutes. Loosen when warm and cool on the trays. Makes about 35.
