Australia Day and our perfect potato bake.


Happy Australia Day fellow Aussies everywhere! We had a fabulous day today. The weather started of a little awful, but we dragged the children out of bed at 7am to make our way to the annual Charity fun run in our area. Lets just say that fun running is not considered 'fun' when running with your children when they 'don't want to run as everything hurts'...but it was a good morning and I am proud to say that my Jonah came in at 101st place out of nearly 400 people for the 3km run....He just took off and I didn't even know where he was!! haha. Good boy Jonah....here are some pics...so here is me with the kids..{Naomi looks really impressed hey...}

This is Naomi taking OFF her bib as it was interfering with her sensory issues...and well, lets just say that she didn't get a recorded time on the day! :(


Here are all the runners....Naomi decided that it was more fun to cross into the path of the fast runners and nearly cause a collision...I promptly handed her over to hubby and continued the run with Hannah who complained about being 'tired' and needing to 'go to the toilet' the rest of the way!


All in all we finished the race. Not a bad effort for team Bunyon. :)

When we got home we had some of our close friends for lunch and this baby was part of the menu...If you are Australian, you have tried this..but nothing like this one..............

Perfect Potato Bake

ingredients

potato. a whole bag full....
2-3 onions
a few good handfuls of diced bacon
chicken stock 
200ml thickened cream
tasty cheese, grated

Method

Peel and wash the potato


slice them thinly and evenly


fry up the bacon and the onion in a little olive oil and some garlic until golden and soft



In a mixing bowl, mix the cream and about 1/4 cup chicken stock


Arrange onion/bacon mixture and potato in layers in a lasagne dish


Pour over cream mixture


Bake in an oven at 180deg covered in foil for about an hour
Check that the potato is cooked through and cover with cheese..then put back in oven for about 20 minutes without the foil until browned


Serve as a side and lick your lips!
