Sweet Summer Berry Muffins



Everyone loves berries and EVERYONE loves Donna Hay. I thought today I would pretend to be Donna and bake these lovely muffins to share with you all. I even styled them for your pleasure. They are light and fluffy on the inside with burst of sweet berry flavour and crisp and crunchy on the outside. They are toooo good you won't stop at one!

Ingredients

(makes 12)

2 1/2 cups SRF, sifted
1tsp baking powder
1 cup caster sugar
1/2 cup vegetable oil
1 egg
1/2 cup milk
1 tsp vanilla extract
300g fresh or frozen blueberries. I used fresh blueberries and strawberries
granulated sugar for sprinkling

Method

Heat oven to 180deg 

In clean bowl wisk oil, egg, milk and vanilla
In another bowl mix together the flour and sugar and baking powder


Combine


Add berries and mix. Do not overmix

Fill muffin pans with paper cases and fill with muffin mixture




sprinkle with extra sugar

Bake in oven for 30-35 mins


remove and cool on wire rack and enjoy them!
