Succulent slow cooker chicken and sweet potato risotto


This is so simple. It tastes divine. It uses one pot. 
It ticks all the boxes and you have to try it!

I am a sucker for anything that is tasty, yet simple and I looooooove risotto so I had to share this. After a busy day the last thing I feel like lately is slaving over a hot stove but I love a good meal and this is just what you need after a crazy day...and the best thing is that it is simple, takes hardly any preparation and is done when you get home!
 Gotta love a slow cooker!

So here it is:

Succulent slow cooker chicken and sweet potato risotto

2 cups aborio rice
2-3 cups fresh chicken stock
4 bacon rashers, diced
1 large sweet potato, diced
1 onion diced
garlic (I use heaps..the more the better!)
30g butter melted
500g chicken thigh fillets (do not use breast as it will dry out in cooking process)
parsley and parmesan to sprinkle
salt and pepper to season


Method

Cut your chicken thigh fillets into small chunks, making sure you remove most of the fat and sinew and put into slow cooker pot. Add rice,  sweet potato, garlic, bacon, onion and melted butter.
 Add fresh stock and stir.
Put on low for 4 hours with the lid on.
Season to taste and add some chopped parsley and parmesan


Enjoy with crusty bread and a side salad.

Basically you could add whatever vegies you want to this but the sweet potato is soooo yummy!!!

  3. Can u do it on low for 8 hours or will it be to mushy? I need ones for when i go off to work for the day and come home with hungry kids! :)
