I had a long time friend coming for morning tea today....I didn't have alot of ingredients or time to make something so I thought I would whip up these scones....they tasted divine!
recipe:
2 cups self raising flour
2 teapoons caster sugar
15g butter cubed and softened
approx 1 cup milk.
Lightly grease a pan or baking dish. Preheat oven to 230deg. Sift flour and add sugar into a bowl. Rub in butter with fingertips.
Stir in enough milk to form soft sticky dough.
Turn onto floured surface and knead until smooth.
roll to about 2cm thick and cut with scone cutter
prepare in dish or tray and brush with extra milk
bake for 15 mins or until golden.
serve with lashings of jam and cream

3 cups self raising
1 cup pouring/pure cream
1 cup lemonade.
Mix together, kneed very lighty then flaten out with hands to around 3 cm thick. Cut out circles.
Bake on 200C for around 12 mins.
Mmmm fluffy and soft scones!
