Berry soufflé



I have always wanted to make souffle and when I came across this recipe at Stonesoup I couldn't help but give it a go. It was fast. It was simple. It was delicious.

I hope you enjoy it too!

4 egg whites
1/3 cup raspberry jam (or strawberry)
1/3 cup sugar
1 tablespoon butter/oil
cream to serve

So basically you whip up the egg whites until soft peaks form. add the sugar until thick and glossy. Then fold through the jam. Add to some ramekins and stick in an oven on 200deg for 8 minutes, then reduce to 150deg for another 5. Serve straight away with cream.
