Quick Apple Tea Cake

There is nothing like a good tea cake. It reminds me of my grandma, she used to make a mean tea cake and you could never just stop at one slice.

Today I was thinking of something that could double up as a lunchbox snack for the kids, a little on the sweet side and some dessert for hubby and myself and I came across this in a recipe book of mine, little kitchen by Sabrina Parrini.

So you put 1 1/2 cups plain flour in a bowl, add 1 1/2 teaspoons of baking powder, 4 tablespoons of sugar and mix together. Then add 1/4 cup softened butter and mix in with finger tips to make breadcrumb consistency. In another bowl add one egg, 3/4 cups of milk and whisk. Add the milk mixture to the flour mixture and whisk until forms a batter.

Grease a cake tin with butter, pour in batter and arrange some peeled, cut apple on top pressing in a little to the batter. Sprinkle with cinnamon and sugar and bake for 30 minutes in a 180deg fan forced oven until cooked.
