Nic's Chicken Sausage Rolls!

Every afternoon lately I have a craving for two things:

something hot
something tasty

I just cannot resist a good tasty, hot treat and especially if I am sitting by the fire under a warm blanket!

These little beauties are just the trick and you will love them as much as I do. I made the recipe up myself and you can add or leave out whatever you please to make it your own.

Why not give them a whirl this week on a cold autumn afternoon? The kids will love them teamed with tomato sauce and you, maybe some sweet chilli?


Ingredients

500g chicken mince
a few spring onions
1/4 of a red onion
some sweet chilli sauce
1 tsp curry powder
1 tsp peanut butter {optional}
coriander {optional}
puff pastry sheets
1 cup fresh breacrumbs
2 eggs
milk for brushing


Method

Preheat your oven to 200 degrees.

So, chop up your spring onions and your onion. 


Place in a bowl, your mince, all the chopped ingredients, 2 eggs and about 1 cup fresh breadcrumbs. I make the breadcrumbs with just bread ends that I had left over...

You can add the coriander now if you are using it. I didn't this time....



Mix the ingredients all together and on a sheet of puff pastry, put the mix down one edge like so...


Now, you could halve the sheet, but I use a whole sheet as it is more pastry and crunchy and well....delicious! 

Roll up the pastry with the filling inside and cut into portions as big as you like and place on a baking tray lined with baking paper.


Brush lightly with milk
Bake in your preheated 200deg oven for about 20 minutes, checking until brown.
