Happy Valentines Day everyone! I don't normally celebrate Valentines as I think that I shouldn't be 'told' when to tell my loved ones that I love them, but today I thought that I would make some sweet cupcakes for my kids and my hubby when he comes home from work. They taste awesome and they are really simple and quick to make. I fit it in just before school drop off!
Ingredients
200g butter, softened
1 3/4 cup caster sugar
2 tsp vanilla
4 eggs
2 3/4 cup self raising flour
1 cup milk
Method
mix butter, sugar and vanilla in a bowl with electric mixer until pale and creamy.
Add eggs one at a time and continue to mix
Add flour and milk, mix
Preheat oven to 180 deg
place mix into prepared muffin tins lined with muffin paper and bake in oven for 12-15 minutes
Cool the cakes on a rack and make icing.
Icing
2 cups icing sugar
some softened butter and milk
Mix all together making sure it isn't runny. tint with colour of choice and decorate your cakes!
