what's for afternoon tea??


Today is rainy and rainy always equals a day of baking something yummy and sweet to have with a lovely cup of tea :) Today I thought I would go with a traditional cake....I got this recipe from my mother in law. It is derived from The Cook School Recipes by Jo Seagar. It was a Nectarine and Plum cake but I substituted the fruit for Pear and Berries.....

so I give you....

Pear and Berry Cake!

two pears sliced thinly (leave skin on)
mixed berries
1 tablespoon caster sugar
1 tablespoon ground cinnamon
200g butter
1 1/2 cups sugar
3 eggs
1 1/2 cups four
1 1/2 teaspoons baking powder
icing sugar to dust


Preheat oven to 180deg. Line a springform tin with baking paper.



Mix fruit in a bowl with a sprinkle of the caster sugar and cinnamon


In another bowl beat butter and sugar together.



Then beat in eggs one at a time. Mix in the flour and baking powder. Pour into the prepared tin


Arrange the fruit ontop of the batter in any pattern you like....

Bake for about 1 hour and 15 minutes until the cake is golden. Cool in tin then transfer to wire rack and dust with icing sugar....serve with a dollop of fresh double cream :) DELISH!
