Caramelised onion Jam adapted from CD Kitchen
3 tbsp butter
4 large onions sliced
2/3 cup brown sugar
place butter and onions in saucepan and saute for 20-30 mins until soft.
add brown sugar and stir for 10-15 mins until sugar dissolves and thickens. Add malt vinegar and stir for 5 mins til thick. pour into sterilised jar and store in refrigerator for months of edible pleasure!!
